German Style Pretzel Rolls & Sausage-Pretzel - The Punkrock-Kitchen (even Punks have a good taste) Tube. Duration : 11.13 Mins.


Ingredients I was using in this video: For the Bread: 1 Sachet Dried Yeast 1 tblsp Sugar 250ml Water, lukewarm 500g Very Strong Canadian White Bread Flour 1 tsp Maldon Sea Salt Also needed: Bicarbonate of Soda Coarse Sea Salt Frankfurters Pumpkin Seeds Method: To a large bowl add all ingredients for the bread. Get a fork and bring everything together. When everything is combined get your hands in and knead the dough for at least 15-20 minutes. Dust your with a little flour and cover the bowl with a towel or clingfilm and set aside for an hour. When the dough has doubled in size, dust with a little flour and knead for another ten minutes. Cut the dough into eight equal pieces. Shape four of the eight pieces into rolls and use the other four to wrap around your frankfurters. Add three litres of water to a large pot. To the water add the bicarbonate of soda and bring to the boil. Preheat your oven to 200 degrees celsius. Cook your rolls one minute each side in the water. After cooking the buns use a razorblade or a sharp knife and score the buns. Sprinkle over some coarse sea salt and pumpkin seeds.
